Christmas Week Eats

Busy pre-Christmas days don't have to mean drive-thru dinners. This looks like a gourmet meal with very little fuss!
Steamed Chicken Cutlets with Tomatoes can be paired with your favorite sides for a delightful meal. Plus, prepare the packets ahead of time to really make the most of your time to fit in all the excitement of the season.

While you're checking out the recipe, be sure to take advantage of all the features of DinnerTool. Meal planners, recipes and great articles are just the beginning of what you'll find.

Something we're really enjoying at my house is homemade kettle corn. A great snack to serve while watching Christmas movies. I have found it to be an exact science - sometimes it comes out great and other times...well...let's just say sugar burns very quickly! But overall it's worth trying it out. But be warned: it's addicting! Tastes just like the stuff you buy at the fair but a whole lot cheaper.
1/4 cup vegetable oil
1/4 cup white sugar
1/2 cup unpopped popcorn kernels

Heat the oil and 3 kernels in a large pot over medium heat. Once those kernels start popping the oil is ready. Add the rest of the popcorn and quickly sprinkle the sugar over the kernels. Cover and shake the pot side-to-side constantly to keep the kernels from burning. Once the popping has slowed to once every 2-3 seconds, remove the pot from the heat and continue to shake until the popping has stopped. Pour into a large bowl and sprinkle with salt. Let it cool just a bit, might have to stir it a little to keep it from all sticking together. Enjoy!
