MexiMix

The other day I gave my mexican spice mix recipe on the air and I'm just now getting it to the blog...it's so easy and great to keep on hand for any time you want fajitas, tacos, burritos, or whatever!! You'll need a small jar or empty spice bottle. Put in 2 parts chili powder, 1 part oregano and 1 part cumin powder. Shake to mix and that's it!! For a small amount to start with, try:
  • 1/4 cup chili powder
  • 2 tablespoons oregano
  • 2 tablespoons cumin
For fajitas that will make you think you've spent a lot of money at a restaurant, slice boneless skinless chicken breasts into short strips. Coat them well with the seasoning mixture and saute them in a little olive oil. Once cooked through, transfer the chicken to a covered container to keep it warm and dump in a bag of already sliced peppers and onions with whatever juices remain in the skillet, add a little more olive oil if needed and a generous sprinkling of your meximix. Warm your tortillas, add whatever condiments you like, and enjoy the great restaurant taste right at home!
