We have recently discovered an incredible grocery store....Trader Joe's. Now every time we go to Gainesville we are sure to visit and pick up a few items. We didn't realize just how fortunate we were to have it so close by, there's only two in the whole state!
Tonight's supper was made up of all TJ items we picked up on Saturday: wild sockeye salmon, asparagus and quinoa. Delicious!! A bag of avocados seemed to be calling me to create a new appetizer that was so yummy I had to share. This is certainly not the best picture. But the taste was great!
Yummy Guaced Eggs
(modified from this recipe)
- 5 hard boiled eggs, peeled and sliced in half
- 1 ripe avocado
- 1 tablespoon finely chopped green onion
- 2 teaspoons lime juice
- 1/2 teaspoon salt
- a few dashes green Tabasco
- 1 teaspoon Worcestershire sauce
- 1 teaspoon creamy dijon mustard
In a bowl combine the egg yolks and avocado. Mix with hand mixer till creamy. Toss in the rest of the stuff and stir well. Spoon into egg whites or pipe in using a ziplock baggie or pastry bag to make it all pretty. Garnish with a sprinkle of paprika and (optional) bits of crispy bacon.Joe has some amazing bacon, by the way! Applewood smoked with no nitrates or preservatives. We've been impressed with everything we've purchased there. Super quality and very reasonable prices. If I was a serious blogger I'd be doing some real reviews and talking up everything TJ has to offer!
