"This is one of my main go to meals. I cook once and have 2 meals!" --Pam
Roast w/Potatoes, Onions & Carrots -and- Shredded BBQ Beef on Rolls
Season a 5-6 lb bottom round roast with your favorite seasonings & sear.
Put your carrots, onions, and potatoes in the bottom of the slowcooker, then the roast, and add 4 cups beef broth. Cook on low 6-8 hours.
Remove roast, cut in half. Shred one half and add your favorite BBQ sauce, put in air tight container for another night.
Tonight you can enjoy roast, potatoes, carrots & onions. Cook a pot of rice to go with it.
Later in the week pick up slaw from the deli & hamburger rolls and enjoy the BBQ.
Pam also had a great idea for something delicious to enjoy that will help you enjoy fall and warm you up on a chilly day. It tastes like a caramel apple!
1 packet instant apple cider- (1 serving)
1 spoonful of caramel sauce
Empty packet in cup of hot water, stir, add caramel & enjoy!
I've got a thank-you gift for Pam's suggestions. The perfect book to get inspired over the next few weeks, Give Thanks by Karla Dornacher. Got a recipe to share? Email it to me: robin@whif.org. If I use it on the air you'll get a prize, too!
