Green Peas with a side of flies...:)

Just kidding about the flies. If you were listening this morning, you heard Dawn get a little goofy with her recipes. She has 5 boys at home and is always looking for ways to shake things up a bit.

Whether you choose to use fake bugs or not, here are some great summer recipes that will be hit for the 4th of July or your summer get togethers!

Curry Rice with Peas

Ingredients:
2 1/2 cups boiling water
1 teaspoon salt
1 1/4 cups uncooked long-grain rice
1/4 cup butter or margarine
1 1/2 teaspoons curry powder
1 1/2 cups frozen green peas
1 tablespoon chopped pimiento or roasted red pepper
Preparation:In a large Dutch oven or covered casserole, combine boiling water, salt, rice, butter and curry powder. cover and bake at 375° for 55 minutes. Cook peas, drain, and stir into rice mixture with pimiento.Serves 6.

Garden Rice Salad

Ingredients:
2 cups cooked long grain rice
1 cup frozen green peas, thawed
1/4 cup chopped green pepper
1/4 cup chopped celery
1 tablespoon finely chopped green onion
1 tablespoon finely chopped radish
1 clove garlic, minced
1 tablespoon honey
1 tablespoon vegetable oil
1/2 teaspoon curry powder
1/4 teaspoon ground nutmeg
salt and pepper, to taste
Preparation:Combine first seven ingredients in a large bowl; toss well. In a small bowl, whisk together remaining ingredients; pour over rice mixture, tossing gently to combine well. Cover and chill thoroughly before serving. Rice salad serves 4 to 6.

Waldorf Rice Salad


2 cups red delicious apples, cored and diced, unpeeled
1/4 cup pineapple juice or apple juice
3 cups brown or white rice, cooked and cooled
1 cup chopped celery
1 cup chopped walnuts
1/2 cup raisins
1/4 cup shredded carrots
3/4 cup vanilla or plain yogurt, low-fat
3/4 cup mayonnaise
1/2 teaspoon salt
1/4 teaspoon cinnamon
Preparation:Directions for Waldorf salad In mixing bowl, combine apples and juice. Add rice, celery, walnuts, raisins and carrots; stir to blend all ingredients. In separate bowl, combine yogurt, mayonnaise, salt, and cinnamon; stir to blend. Stir mayonnaise mixture into apple mixture. Cover and refrigerate Waldorf salad until ready to serve.
